We choose this month's cocktail at Scala Restaurant.

Our first candidate is the traditional Cyprus brandy with its strong aroma and full taste. Cyprus Brandy, which takes its flavour from the white Xynisteri grape grown in Cyprus and has a unique aroma, can be a great drink option as a dry, appetizer, cocktail or digestive. Our second candidate, Metaxa 5 has a mellow and floral character with a smooth taste, and notes of vanilla, brioche, white raisins, Muscat and subtle woody aromas make Metaxa enjoyable and delicious. Metaxa 5 is produced by sun-drying and double distillation of organic grapes collected in Soultanina, Koritnthiakos and Savatiano regions, blending with a special Muscat wine produced in the islands of Lemnos and Samos, infused with a variety of herbs and aged for 5-15 years in oak casks. The resulting wonderful flavour is the legacy of Dionysus in glass bottles enjoyed in Scala Restaurant.

Napoleon’s cognac Courvoisier is among the best cognacs in the world. Courvoisier, which has a rich taste with spring flower and ripe fruit aromas, fresh and oaky, balanced with the vigour of a young cognac. This cognac, which contains a striking flavour blend of the rare grapes of the Grande Champagne, Petite Champagne and Fins Bois regions, aged for many years in Limousine casks made of oak, is offered in three different types as VS, VSOP and XO.
Bringing traditional flavours from the Middle Ages to the present, Calvados is a delicious brandy style spirit traditionally distilled from the finest cider apples grown in orchards in Normandy’s Calvados region. This coastline in the north of France is famous for its apple orchards, where 9 million trees are planted on thousands of acres. Traditionally, it’s produced from distilled apple cider is distilled in copper stills, then aged in oak casks which gives its unique colour and beautiful bouquet. The privilege of Remy Martin’s taste comes from special grapes selected from the Grande Champagne and Petit Champagne regions, known as the heart of cognac, and that at least 50 per cent is produced from Grande Champagne grapes. Remy Martin V.S.O.P., the world’s first known V.S.O.P. (Very Special Old Pale) cognac, owes its aromatic and intense flavour to 4 to 14 years of ageing in oak Limousine casks.
Armagnac V.S.O.P is a brandy of complexity and distinction, distilled in a traditional copper alembic pot still from white wines of the Baco, Ugni Blanc and Folle Blanche grape varieties of Armagnac region, and aged for at least 7 years in Montlezun oak casks to develop their own superb fragrance until blending. Armagnac is generally enjoyed as an after-dinner liqueur, but also as a long drink and cocktail with still or fizzy water, soda or fruit juice. 
Hennessy XO (extra old) cognac is produced from exclusively selected best grapes from the four grand cru regions of the AOC (Grande Champagne, Petite Champagne, Borderies and Fins Bois) to ensure excellence and variety of its unique blend of warm, full-bodied flavour.
